Step 1

This is a very easy and delicious salad which can be easily further customized. Slice the cucumber into slices or chunks depending on your preference, same with the tomatoes. Put them together in a bowl and add the olives, either halved or whole. You may use Kalamata or Black olives or even Green olives, use any type you like, they all go great with the rest of the flavors.

Step 2

Add the salt, oil, and vinegar to the vegetables and mix them. You may add more olive oil or vinegar if you prefer. Finally, crumble or cut the feta in chunks and place it on top.

Step 3

To further customize it, you may add a protein like grilled chicken or chickpeas, just straight out of a tin, drained, and mixed in with the veggies. You may also add bell peppers, iceberg and/or carrots if you would prefer a vegetarian option with a bigger variety of vegetables. And if you prefer extra seasoning, it goes great with cilantro, oregano or scallions/onions.
