Panfried Cod with Carrot and Sweet Potato Mash
- Cod 1 pce
- Broccoli 30 g
- Sweet potato 40 g
- Carrot 1 pce
- Dill 1 tbs
- Salt 1 tsp
- Butter 1 tbs
Peel and chop the sweet potato and the carrots.
Add them to a large saucepan along with enough water to cover everything. Cook them until a for can easily go through them.
Starting off by seasoning the fish with salt and dill. Next take a large pan add in the butter let it melt on low heat, once the butter is melted add in the fish. Cook each side on low to medium heat for 3-5 minutes.
Blanch the broccoli in hot water which simply means take a handful of broccoli chopped to your desired size. Then take a large pot add in boiling water a pinch of salt and drop the broccoli in for about 4 minutes so it can hold onto its bring green colour and a little crunch.
When the sweet potato and carrot is ready mash them smooth with a masher. You can add seasoning or just enjoy the freshness of the veg.
Plate up your dish serve it with white sauce and croquettes.
