Parsley Potato

  • White potato 2 lge
  • Parsley 1 hfl
  • Onion 1 med
  • Salt 2 tsp
  • Vegetable oil 2 tbs
Step 1

Wash, peel and chop the potatoes.

Step 2

Take a large pan and put the potatoes into it along with just enough water so it covers the potatoes.

Step 3

Boil the potatoes for approximately 15 minutes or until a fork can easily go through it.

Step 4

Pour off the excess water off the potatoes.

Step 5

Peel and finely chop the onions. Take a small saucepan add in the onions along with the oil.

Step 6

Fry the onions until they turn transparent, then add them to the potatoes.

Step 7

Finely chop the parsley and also add it to the potatoes.

Step 8

Give the potatoes a good mix, but try to not break up the potatoes. Serve it with any main course as your side.
